In a small bowl combine 2 tsp. paprika, and 1/2 tsp each cayenne pepper and salt.
Heat 1 Tbsp olive oil in a large nonstick skillet over medium heat.
Season 2 tilapia fillets (about 1 lb. with the spice mixture and
cook until golden brown and opaque throughout. About 3 minutes per side.
Flake the fish in large chunks. It's great for fish tacos!
Serve with creamy cabbage and sweet corn slaw
In medium bowl whisk together 2 Tbsp each sour cream and lime juice,
1/4 tsp cayenne pepper and 1/4 tsp salt. Add 1/4 small head green cabbage
(shredded about 2 cups) and 1/4 cup corn kernels and toss to coat.
Let sit, tossing occasionally for 10 minutes. Fold in 1 scallion
thinly sliced and 2 Tbsp fresh cilantro.
Both are low calorie and such a nice combo.
